Our 100% Iberico Bellota Shoulder Ham is one of our star products, specially due to its excellent quality-price ratio.
Made from 100% pure Iberico pigs, lampiño breed, selected by our founder, after serious genetic studies, as the best for making Iberico ham. The pigs live free roaming in the Dehesa (Acorn woods), feeding mainly on natural products, specially the acorn, which is their main food during almost 4 months of “Montanera” (acorn season) that they enjoy, prior to slaughter.
The making of this shoulder hams is totally artisanal. This pieces are cured for a minimum period of 24 months in our drying cellars in the Jabugo area. Constant follow-up of every piece helps to guarantee their quality and consistency.
Made from exactly the same pigs, and with a similar manufacturing process as the 100% IBerico bellota ham, the difference with the shoulder ham is mainly in their weight. The smaller size of the shoulder ham allows for a shorter drying period, and makes it ideal for eating at home. The experts say that its taste and aroma can be more intense, due to the different fat infiltration in the muscle.
